Single Origin Espresso
Notes of orange and plum, with floral undertones.
Origin: Palestina, Huila, Colombia
Variety: Pacamara
Process: Extended fermentation washed
This Pacamara lot was produced by Linarco Rodriguez, 2000 metres above sea level at Finca Betania, located in the Palestina municipality of Huila, Colombia.
Linarco Rodriguez is a community leader and member of Tierra Diversidad; a network of 117 smallholder producers united by a shared commitment to land stewardship, traditional farming methods, and chemical-free cultivation.
His deep agricultural knowledge, mentorship of young growers, and support of local initiatives have made him an influential figure in raising quality standards across the region.
This coffee was processed via an extended fermentation washed method. After depulping, an open-air 32 hour fermentation stage accelerates microbial activity, resulting in a brighter and more complex flavour profile. The coffee is then washed and dried before being milled.
In the cup, this coffee tastes like peach and mango, with maple syrup-like sweetness.
We roast every Wednesday and ship every Thursday.
